Ingredients
- 1 medium zucchini
- 1 medium carrot
- 1 cup of shredded hash browns
- 1 5 oz. block of parmesan cheese
- 1 teaspoon of minced garlic
- 2 eggs
- Salt and black pepper
- Bread crumbs
- Dill dip or Tzatziki
Procedure/Direction:
- Grate zucchini to shreds.
- Grate a carrot to shreds and mix with zucchini.
- Add in shredded hash browns and strain out the excess moisture.
- Add in shredded hash browns and strain out the excess moisture.
- Shred the cheese finely and add cheese and garlic to the vegetables and mix
well.
- Shape the vegetables into croquettes and coat with bread crumbs.
- Fry croquettes in hot olive oil for five minutes on each side.
Let cool and dip croquettes in dill dip or tzatziki. Enjoy!
